Indonesia's culinary landscape is one of the most diverse in the world. With more than 17,000 islands and hundreds of ethnic groups, every region has its own ingredients, techniques, and traditions that have been passed down through generations. Yet, experiencing those regional flavors in one sitting is a rarity.
Last week, we had the opportunity to experience A Nusantara Story, the latest edition of Dining Room at Park Hyatt Jakarta's ongoing culinary series. This special collaboration welcomes acclaimed Indonesian chef Norman Ismail, who presents a collection of signature dishes inspired by regional Indonesian cuisine while embracing contemporary techniques and refined presentation.
Rather than recreating traditional recipes exactly as they are, Chef Norman takes a more thoughtful approach—preserving the soul of each dish while presenting it in a way that feels elegant, modern, and perfectly suited to Dining Room's sophisticated setting.

Available as part of Dining Room's signature Indonesian buffet, A Nusantara Story goes beyond showcasing familiar dishes. Instead, it tells stories through ingredients sourced from across the archipelago, highlighting how diverse Indonesian cuisine truly is.
Walking through the buffet, you'll find an impressive spread of regional specialties, while Chef Norman's exclusive creations add another layer to the experience. Each dish feels intentional, inviting diners to discover flavors they may recognize—but interpreted from a fresh perspective.



Four Signature Dishes That Stood Out

One of the highlights of the evening, Beef Tuturuga transforms North Sulawesi's traditional Tuturuga into an elegant main course. The sous vide beef tenderloin is remarkably tender, complemented by a fragrant beef jus infused with pandan and kemangi. The cheddar kremesan introduces an unexpected layer of richness, while the chili oil adds just enough heat to balance every bite.

Perhaps the most refreshing dish of the collection, Tuna Lawa Baleh combines delicate tuna crudo with bilimbi, caramelised pineapple, pomelo, green chili, and torch ginger oil. The result is bright, vibrant, and beautifully balanced—capturing the freshness often found in Eastern Indonesian cuisine while maintaining the refinement of contemporary dining.

Inspired by West Java's beloved Bakakak, this interpretation features perfectly cooked free-range chicken served alongside aromatic kari sauce, crunchy potato cake, sambal bawang, peanuts, and pickled lobak. Familiar flavors remain at the heart of the dish, elevated through thoughtful presentation and careful attention to texture.

The Andaliman Octopus quickly became one of our favorites. Tender grilled octopus is paired with a rich kalio reduction, deep-fried cassava ball, pickled shallots, fried shallots, and crispy gendar. The unmistakable citrusy numbing notes of andaliman bring everything together, creating a dish that's both bold and deeply rooted in Indonesian flavors.
